You can delete saved podcasts from your iPhone's Podcasts app by swiping the episode to the left, and selecting the red "Delete" button that appears.
You can delete all stored podcasts from your Apple Watch, or all episodes of a podcast by changing your settings in your iPhone's Watch app.
