HIGH PROTEIN MEXICAN STREET CORN PASTA SALAD for Cinco de Mayo! Pasta Salad season is here! This is a Mexican street corn inspired pasta salad - think elote, but with all sorts of little twists. It’s my take on it, so the flavors might be a little different, but this was one of the best pasta salads I’ve ever made - it was SO refreshing and good! To keep it high protein, I used my Kaizen Food Company pasta - it has 20g protein 6 net carbs since it's made with the Lupini bean, but you can use any
